I can't believe its finally over!!!

2011 was the year from hell for us and I am so happy its over in a few hours.

But I figured I'd show the good things that did happen this year even though they're far and in between lol

January

We started out the new year PCSing to Fort Riley KS

We discovered Jamba Juice in Chicago and that made the early 6 AM flight better!!

We flew into St. Louis picked up our car and drove six hours to KS

We moved into our first house in Manhattan KS

Checked out the OZ museum in Wamego KS

February

Not a whole lot happened this month

We got our household goods and unpacked everything

Mom and Dad came down to visit us

and lots of bingo

But we did get to go to Salina KS and see Bill Engvall

Nick's mom came down when he had his PRK eye surgery

I LOVE Bumble from the old claymation movies!!

1. Eggnog or hot chocolate? hot chocolate! I do not like eggnog.

2. Does Santa wrap presents or just set them under the tree? Wraps them, of course!

3. Colored lights or white? I love colored lights but once in awhile I like white ones

4. Do you hang mistletoe? No but I think I should start lol

5. When do you decorate for Christmas? Most of the time after Thanksgiving but we were a little late this year

8. When and how did you learn the truth about Santa? I asked my mom one year and she told me and I remember crying all about it

Today my Mom and I went to a craft fair, I won a door prize and its the cutest thing.

The lady who made them just drilled a hole in the back of the wine bottle near the base and somehow got a strand of lights into it.

I can't wait to put it out for Christmas!!

Apple Cider Cupcakes

So I'm a sucker for those dumb books with recipes that you see at the checkout from the store, well they had a Halloween one last week and if you know me enough I LOVE LOVE LOVE Halloween. So I bought it and read through it the other day and came across this recipe and I knew I had to make them.

So I've been reading the Pioneer Woman for a few years now and thought it would be fun to do a food blog entry of my own so lets give it a try!

Apple Cider Cupcakes with Apple Cider Frosting

You'll need

1 pkg of your favorite spice cake mix

1 1/4 C. of Apple Cider

*I just made two cups and used the rest for the frosting*

1/3 C Vegetable Oil

*I used Olive Oil*

3 Eggs

2 C. Coarsely Chopped Walnuts and some extra for garnish

*I skipped that cause I'm not a fan of nuts in my cupcakes lol*

Preheat your oven to 350

Mix together

Cake mix

Apple Cider

Oil

Bubble Bubble toil and trouble.....

and finally the eggs.

Anyways mix everything together with mixer at low speed until blended

Then beat at medium speed for two minutes. If you are using walnuts stir them in now. Then spoon mixture into muffin tins.

Those paper cups didn't sit right.....weird

Then bake these puppies for 20 min or until you can stick with a toothpick and it comes out clean.

Then let them cool for ten minutes and then remove to a wire rack to completely cool.

So while the cupcakes are cooling you can make the frosting.

Apple Cider Frosting

You'll need

1 stick of softened unsalted butter

1/4 C Apple Cider

4 C Powdered Sugar

Beat softened butter and apple cider with mixer at low speed

Then gradually beat in powdered sugar until smooth

Then when your cupcakes are completely cool you can frost them! I sprinkled some cinnamon on mine but if you're not into that you don't have to.

**WARNING**

Please don't judge me on my VERY bad frosting skillz

Nick sure liked them, so I guess I did ok!

A few weeks ago we had to go to Topeka to make a return at the Yankee Candle store(very very very bad store...I buy too much)

The Zoo is pretty neat but not as big or interesting as the Honolulu Zoo.

Well after waiting for seven months we finally were able to move into post housing on Fort Riley. Its not bad but not as roomy as our old house in Manhattan. But that the price we pay for not having kids. For those of you that are facebook friends you probably have seen these pics before. : )

Nick and I were walking to get the mail the other day and noticed our neighborhood Bunny Foofoo outside close to the house so I decided to get my camera and take some pictures.

Hawaii in a Box

As some of you may remember this blog used to be called "Girl stuck on a rock in the middle of the ocean" Well ever since leaving Hawaii I've been kicking myself for not picking up a few more things.

Nick's brother just PCSed there a few months after us, so while Nick's parents where there visiting his brother I gave them a shopping list for stuff I forgot to get and stuff I missed and wanted.

So Hawaii came to us in a first class box!!

Ever since leaving the island I've noticed I've become a pineapple snob, I can't eat the stuff for the store unless it is from DOLE. All the other ones are from Mexico or other places and to me they taste like crap. So it was soooooooo good to bite into a Dole pineapple.........Now if only I could get a Dole Whip in the mail. That would be AMAZING!!!!

Over the Thanksgiving weekend in 2010 we went to the Big Island, right outside of the Volcano National Park there is a town called Volcano......yep they sure know how to name their towns lol But anyways there was a winery and we tried some wines and loved this one. Whats neat about this Guava wine is that every batch is different. Locals will bring them the fruit for money and since the guava comes from all over the island its always a mystery on how it will taste. What was nice about it was you can pick it up at Walmart or the NEX on Oahu.

I totally forgot to pick up these coasters and shot glass before we left. So at least I was able to have my in-laws grab them for us.

I love these bamboo wind chimes. The ones here on the mainland sound weird to me........I'm starting to sound spoiled.....We were living over there!!! lol

Yep more sea turtle stuff. I fell in love with the Honu over there!!!

My yellow one I planted at the same time as my plumeria didn't grow so I'm gonna give it another go. BTW if you kept up with my 365 and remember the photos of my plumeria, its still BIG and growing, No blossoms yet though.

First Territorial Capitol

So we had to go out to Fort Riley so Nick could take care of one of his soldiers and again so we wouldn't be wasting gas, decided to check out the territorial capitol building.

Its a neat little building with different info and artifacts to look at.

Here is some info about the building

This building was the capitol for only four days in 1855, but many believe that the actions of the legislature that met here led directly to the Civil War. Governor Andrew Reeder, picked this location, away from the proslavery influence of Missouri, where the legislature would choose a permanent seat of government, create a constitution, and decide if Kansas would be a free or slave state. Instead the legislature kicked out the antislavery members and passed a bill to move the government to Shawnee Mission near the Missouri border. Inside this native stone building you?ll learn the stories of the antislavery and proslavery people of territorial Kansas, set alongside the beauty of the Kaw River Nature Trail.

We were told that Governor Reeder must have brought this chair with him from back east because the wood has not warped, the wood here in Kansas is a soft wood so things from back then have warped over time.

The Custer House

Well today was Friday and Nick normally has half days on Friday so we decided to go and check out the Custer House.

So from what our tour guide told us this is NOT the house that Custer lived in. His apparently burned down years ago. So this is a home that was very similar from that time period.

Well today we actually did something close to blog worthy!!

Nick has been on staff duty all this month except when he had his PRK surgery done. So he got off work this morning and took a four hour nap.

When he was up and ready we drove up to Wamego. You might remember that place from before when I blogged about the Wizard of OZ winery and museum. Same town but this weekend they were having a tulip festival.

So we decided to go and check that out since the Renaissance Faire I wanted to go to in Wichita was two hours away. They had a bunch of food booths and crafty stuff but nothing I really needed to spend money on.

The biggest thing that I liked was seeing the old Dutch wind mill, I guess they still use it to this day

And then I just took some pictures of the pretty flowers

So like I said nothing too exciting but better then sitting at home.

OZ Museum and OZ Winery

Well today we decided to take a trip up to Wamego and to go check out the OZ museum.

Its a cute little tourist trap but we enjoyed it...plus found our Christmas shopping haven.

Inside they have a little gift shop and for a small fee you can go through the museum, they have life size figures from the movies and copies of the book printed from around the world and lots of cool movie memorabilia.

Well I'm a bit late on posting this but I do have a good reason this time!! We just PCSed to Ft. Riley KS so I was a wee bit busy around the new year so without further ado here was my year,

January

The year started out with Dad's one year anniversary of his heart surgery and still doing very well

We started fixing up my sister's old room into my mom's new craft room

Sent out a New Years care package

Spent ANTI-Valentine's Day watching horror movies with my friends

Drank Green beer and spent st patty's day with my girls

Sent out a Easter care package

Took photos for my nephews' birthday party

Dyed Easter eggs

Laughed at stupid signs

Seen cherry blossoms

Seen the Thomas Jefferson monument

Seen the Lincoln monument

Seen the change of the guard and the tomb of the unknown soldier

and spent a great time with my mom

May

Nick came home for mid deployment R&R

I turned 22

I got a new wedding ring set

We bought a 2007 V-Star Classic 1100 motorcycle

Nick's brother Jason came home to visit

and we took a family photo lol

June

Spent time at the park

Almost got ate by a dinosaur

Saw a CREEPY chipmunk

JULY

Went swimming at hippy hole

Watched fireworks with my friends at the park

Had old fashioned photos taken with my best friends

Discovered a pineapple milkshake that is to die for

Went camping with friends

Went to Colorado with my mom to see Brooks & Dunn's farewell tour

Then drove back to SD only to turn around two days later and drove to Denver to see Lady Gaga with my girlfriends.

August

Pierced my ear\

Flew back to Hawaii to see Nick's homecoming

Flew back to South Dakota for Nick's leave

Then after two weeks flew back to Hawaii AGAIN...

September

we rented a small little apartment in Mililani for the few months we were back in Hawaii till PCS time came.

Tried real ramen

We learned that car+blackberry=VERY VERY BAD

October

Nick went to WLC at the end of the month and I flew back to SD AGAIN!!!! ughhh

Made sushi

Discovered (20 years too late lol)

The Nightmare on Elm Street movies and loved them.

Spent Halloween with my friends

November

I flew back to Hawaii...

Went to a company cocktail party

My mom came over one more time before we moved

Saw the Black Pearl

Then over the Thanksgiving weekend Nick and I flew to the Big Island to see the volcano

Saw black sand

Swam in a naturally heated ocean fed pool

and saw lava's full power

December

We celebrated our 3rd wedding anniversary

Then we had the movers come and pack up the house

Then we stayed in the hotel till the 12th and flew back to SD for the last time "thank god"

Had a Christmas party with our friends and we decorated the tree

Went to my first hockey game

and then went out on the town New Years Eve

Well that has been my year, I hope you enjoyed looking through it.

So on to the next my Ft. Riley adventures await me in 2011.

So yeah I epic fail.... I was almost done with my 365 and 52 weeks projects.... but alas I got lazy and didn't finish them. Nick came home early so I lost the motivation that I did have.

So to give a quick update, we got a little apartment in Mililani for the three months that we were here. I went home in October while Nick was at WLC and then came home in November and my mom flew over to visit for a week. After that we took a mini vacation to the Big Island.

Last week the movers came and packed up our little apartment and now we're in the hotel waiting till Sunday to fly off the island.

I do have a ton of pictures from the past few months just not edited or anything so I'll get to that someday and post them. So that's all for now, I guess I'll have to rename my blog here soon. Something Kansas-y lol
